All blades are made of 12C27M stainless steel and have a hardness of 57 - 58 HRC. With a carbon content of min. 0.40 %, the alloy also ensures low brittleness (risk of breakage), good cutting ability and a long-lasting high level of sharpness. The handles are made of French beech, this wood has a beautiful homogeneous grain with characteristic fine and dark strokes and is very durable and resilient due to its hardness. From the N°06 knife onwards, the blades can be locked in the folded and unfolded position with the safety ring.
